Choosing Ibérico ham is easier when you separate three questions: which category you are buying, how you will eat it and what the advertised weight includes. An attractive label does not answer all three. Read the full designation and speak to the supplier about your plans.
What the seal colours mean
The quality standard identifies Ibérico hams and shoulders using four seal colours. Read the colour alongside the full product designation and the relevant breed percentage on the label.
| Colour | Designation |
|---|---|
| Black | Bellota 100 % Ibérico |
| Red | Bellota Ibérico |
| Green | Cebo de campo Ibérico |
| White | Cebo Ibérico |
See the Spanish Ministry of Agriculture's quality-standard guide and Royal Decree 4/2014 in the official gazette. The seal does not replace checking the label, and one category does not guarantee an identical flavour across all legs.
A whole leg is not always the most practical format
For occasional consumption, small packs of slices may suit you better than keeping a whole leg open for a long time. If you want to carve at home, allow for a stand, knives and a realistic pace of consumption. For an event, it can be helpful to select the leg with the professional who will carve it and understands the service format.
Purchase weight is different from serving weight
A bone-in leg includes rind, external fat and other material that will not become sliced servings. Curing and anatomy affect yield. Do not choose a specific leg weight assuming a fixed number of plates: ask for an estimated edible yield for the selection.
The guide to ham quantities per guest helps calculate the amount to serve first. The number of legs and a suitable margin can then be planned around that scenario.
Questions to ask before buying
- The full product designation, breed percentage and producer.
- The format: bone-in, boneless or sliced.
- Curing style and recommendations for your intended serving date.
- Storage instructions before and after opening.
- The supplier's process if there is a problem with the leg.
More months of curing do not automatically make a ham the right choice for everyone. You may prefer a more intense or firmer style, or something different; ask about the individual product.
Buying for a celebration
Give the carver the date, location, guest count and menu. With private ham carving, you can ask about using a leg you already own or a proposal that includes the product, travel and carving.
